As for the bike, maybe you can negotiate a little with the insurance people so they don't write it off completely.
It sucks that you got hurt, but hurt is better than FUBAR.

With regards to the salvage, you can buy back the salvage. It is then your responsibility to dispose of the scrap (legally). No part of the frame or engine with numbers are then allowed to be used on the road again, or the track believe it or not. I had this with a CBR600 that was a category b, I enquired as to buying back the bike, it was no where near as bad as yours, it was still rideable. I was looking to put it on the track but was told the bike has to be dismantled, prosecution if it is discovered on the road. Buy the bike back if you have a reasonable outlet for getting rid of the usable salvage. If not take the money and get another bike and watch out for doddery old gits.
