I made my own dog bones. I have 155mm in there & it work well. But for the road riding 158s would be fine.
Changing the fork fluid will make a huge difference. I went from the standard 5W to 20W for racing, probably go 15W for the road. Remember I have a 92 with USD forks.

20w should be fine for street as well. I'm still in the process of going through my 94 1k so I haven't gotten to suspension as of yet but that is what weight I plan on running when it comes to that. I actually ran 30w oil in the forks or my old bike..which was a 92 FZR600 and that helped a lot. It'll still come down to what you feel is "comfy and stable".
