Whats a Valve Job Normally Cost on a 600?

I've got a higher mileage 99 600. I've spent the last couple years getting used to riding a bike, this summer I'm planning on using it as my only transportation.
If I were to do a valve job, whats normally included by default when I've got it open? Does Yamaha still make parts for these? I know on cars they stop a decade after productions ends, that puts us on whats stocked in the warehouse.
I've got the manuals and a lot of technical knowledge from cars, but little on bikes. Whats the difficulty level on these things? I know a shop would overcharge me, but what would it run for the full job? How about cutting the valve seats?
