I noticed my headers look like they have been sand blasted with ball bearings. I mean they are still in one piece and they dont look like they have cancer or falling apart, but i would think they would be smooth how can i tell if whats on there is stock or not. I know it has V&H mid and canister (ha ha no baffle
). Im just not sure about the headers is there anything that changes out. Without bending or moding.

If it's the V&H SS2R, then it could be a stock header.
If it's the Supersport, then it should be the matching Supersport header. Mine had the texture of a golf ball, but I think it was from the paint falling away in a pattern. I sanded them down and repainted them with black grill paint.

My V&H supersport full exhaust looks like you had described yours.

Big D,
may be just may be because both of you describe this "finish" the same way it is to enlargen the surface area to aid cooling if it sis in a set pattern like a golf ball?

You actually don't want your exhaust to cool. You want it to stay hot so it keeps the same volume. As the hot exhaust gases cool they get smaller in volume effecting flow and creating turbelance. Exhaust wrap and ceramic coatings are designed to keep heat in the exhaust.
I'd guess the texture you describe is from rust pitting over time. I have seen it plenty of times.
The pattern on a golf ball is there to help it cut through the air better, much like the hull on a race sailboat helps break surface tension of the water.

Captain,
Over the last 40+ years I have seen all sorts of "gimmicks" on engines some come & go some get "re-invented" and whilst mainstream thinking is as you quite rightly state hot is better, it has not always been so.Next time you see a BMW horizontal opposed engine take a look at the header pipes with big fat fins on the lock nut. A number of Brit bikes were fitted with coils over a period of some 30 ish years
And golf ball finish you answered your own statement water is air but more solid in "fluid Dynamics" I believe......
