Your chain is not likely causing head shake at speed. Have you lowered the front of the bike or raised the rear? That can induce head shake. check or replace the wheel bearings, steering stem bearings and swingarm bearings. I'm guessing with the age of these bikes, It's a set of the bearings somewhere. Lost wheel weights will be noticeable, but won't cause bad head shake. Is your bike sprung for your weight? Suspension setup can make the world of difference on how the bike handles. Set the sag of the bike and see if the springs are right for you. Maybe the front springs are worn and the front end is just sitting a bunch lower? Don't ride it till you fix it.
