The only online manual I found (where I also got the correct information from) was in German, so I had translated the carb page in order to get my findings. I too have been trying to find the "english" version of the FZ750 service manual. Will post should I find anything.

OK, FYI for anyone wanting to know, the 87 FZ750 stock fuel level is 8.3 mm -+1mm under the float level lines on the outside of the carb not from the carb edge as stated by the Clymer FZ manual (not sure what Haynes manual says), this is from the Yamaha service manual which I found online finally!. ...

87 FZ750 fuel level or float height?
Can't find what the stock float bowl height is for a 87 FZ750 genesis. The fuel level is supposed to be 8.3 mm but is this measured from what point on the carb? and what are the lines marked for on the outside of the bowls as this marking would be way too much fuel if that were the level. You should "not" compress the springs if setting your fuel level this way, the float bowls should just "seat" onto the fuel needle spring and measure from carb gasket seat to top of float bowl. I use a caliper locked in at my designated measurement, much easier this way. I recently set my float bowl...

Not sure on Needle setting but fuel /idle mixture screw should be 3 1/2 turns out for stock.
